I’m always hungry, but I don’t really want to go outside to buy snacks, so I often try making things up using ingredients I have at home.
Today, I’m in the mood for sweet, but I ran out of eggs, so I couldn’t make brownies and chocolate cookies, so I decided to make this simple snowball cookies.
Ingredients :
- 100 gr butter (room temperature)
- 35 gr powdered sugar/confectioners sugar
- 10 drops of vanilla oil
- 120-150 gr all-purpose flour
- If you have peanuts, crush them into small pieces to add into the dough later, totally optional
- More powdered sugar for coating, around 100 gr should be enough
How to make :
- Using a hand mixer, mix together room temperature butter, 35 gr powdered sugar, and vanilla oil. If your butter isn’t at room temperature, pop it for a few seconds in the microwave, just don’t let it melt too much.
- Add all-purpose flour and peanuts if you have (and a little bit of salt if your butter is unsalted) and mix well. The dough should be sticky but not annoying to remove from your fingers and mixer.
- Set your oven to 180 C, and while waiting, make small balls from the dough and place them with some space in between. They’re going to grow a little bigger than the original size.
- Bake for 15 minutes or until the bottom of the balls turned light brown.
- After they’re done, let them cool a little, and prepare the powdered sugar for coating, the coat the balls while warm, but not hot.
- Enjoy the lingering buttery-vanilla smell in your house and the snowball cookies!
I love making my home smells like home. Butter, vanilla, chocolate, sweet things are my favorite. If you want to make chocolate snowballs, add cocoa powder, around 20-30 gr, and reduce the flour. Your home will smell so good your husband will want to be home all the time. HEHE.
The whole process shouldn’t take more than 30 minutes. The mixing was really quick for me, around 2-3 minutes for the whole thing to come together. And because it’s only using a mixer and a bowl, it’s really easy to clean. I hope you enjoy making this as much as I do.
